Beet and roasted onion sausage
From Sara Bigelow of The Meat Hook yields 2 pounds of sausage
1 kilo fine ground pork
150 g beets, peeled, minced in food processor and drained
1 1/2 large onion, chopped and roasted
17 g salt
4 g black pepper
Roast onion till soft and lightly browned. Mince roasted onion by hand. Mix all ingredients, adding ice water slowly until the mixture is sticky and all ingredients are well incorporated. Stuff into sausage casings and go for it.
