The Quick Fix Chocolate Cake

Preheat oven to 350°F. In a bowl, mix 2 cups AP flour, 2 cups sugar, 3⁄4 cup unsweetened cocoa powder, 2 teaspoons baking powder, 11⁄2 teaspoons baking soda, and 1 tsp salt. Whisk in 1 cup milk, 1⁄2 cup vegetable oil, 2 eggs, and 2 teaspoons vanilla extract until well combined. Slowly stir in 1 cup boiling water. Pour into 2 well-greased (9-inch) round cake pans or 1 (10-inch) springform pan. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Cool. Remove from pan. Sprinkle with toasted coconut. Eat.
